"Patriot fries? Freedom fries? We've found an alternative that skirts the whole issue. At El Trovador, 318 S. Broadway, 410-276-6200, the fried yucca is to die for. Okay, so what's a yucca? It's a tuber, make no mistake, but slightly sweeter and more fibrous than a potato. El Trovador hand-cuts and fries them so they're crisp on the outside, tender on the inside, with a substantial creaminess that, for our money, smacks the lowly potato upside its head.
